Sitting here eating kimchi thinking about what homemade might taste like. @Fiddler's Green next time you make it can I purchase a jar from you?
I'll do one better amigo.

5lbs Napa Cabbage
10oz matchstick carrots
20oz Daikon Radish (or turnips in this case)
1 medium apple
2 bunches of Green Onions
7 oz Ginger
5 Tablespoons fish sauce
5 Tablespoons Gochugaru pepper flakes
1/3 cup Kosher Salt

Chop and wash the cabbage. Once washed add salt and crunch together and let sit for 1 hour. Rinse cabbage well and drain (described in the video below)

Peel ginger, chop 3 green onions and core apple.

Blend until smooth and set aside.

Shred/chop the Daikon (turnips), chop the rest of the green onions and toss together with the carrots

Add chili flakes and fish sauce to blended apple/ginger/onion mix

Mix everything together and cover. I use a 2 gal food safe container and squish the mix down with a small plate. Check it every day for four days then jar.
